Holy Vegan Macaroon

These No bake chocolate macaroons are going to be a hit around the house. These are super easy to make and aside from the chill time it can be done in minutes.


Chocolate Vegan Macaroons

microwave or double boiler I used a small pot with a metal bowl on top

Ingredients

  1. 1/2 cup dark chocolate I used 70% cocoa

  2. 1 tbsp coconut oil

  3. 1/2 tsp vanilla extract

  4. pinch sea salt

  5. 3/4 cup shredded coconut

Instructions


Using a double boiler or microwave melt the chocolate chips and add in the coconut oil, vanilla and salt.


Stir well then add in the coconut and mix.


Scoop 2-3 tablespoon portions on some parchment paper and transfer into the fridge.


Allow to chill for 1.5-2 hours and then serve.
