Vegan Breakfast Skillet

This is such an easy yet versatile meal to make. I love this on a Sunday morning with a cup of black coffee.

Sometimes I make extra and use it to make a burrito the next day and add in a few other ingredients.

Healthy Potato Hash Made with Luv

Cast Iron Frying Pan

Ingredients

  1. 2 potatoes of choice chopped in small cubes

  2. 7-8 large white button mushrooms chopped

  3. 1 whole red bell pepper chopped

  4. 1/2 large onion chopped in small pieces

  5. 1 tsp sea salt

  6. 1 tsp garlic powder

  7. 1 tsp smoked paprika

  8. 1 tsp dried chives

  9. 1 tbs olive oil

Instructions


Add olive oil and potatoes in skillet and cook on med – high for about 10 =-12 min.


Now add onions and red peppers and cook for another 6-8 min.


add in mushrooms and all seasonings and mix well. Cook until peppers are soft and potatoes are slightly crispy.


I put a couple of spoonfuls of mashed avocado on mine.
