What To Make In A Pinch

Ok so we all have those days (sometimes most days) where we don’t really feel like cooking from scratch. Not feeling the …. let’s get our 10 – 15 ingredients together and then realize you’re in the middle of a food shortage.

Well have no fear. There still a lot of choices to make that quick meal. Thankfully in todays society, it’s a great time to be a vegan. So many options now. Not only are the fast foods and restaurant industries accommodating, so are the grocery stores.

Quick vegan burgers, dairy free cheeses, meat substitutes of many kinds. Chicken and fish flavours etc. Although probably not the healthiest choice even though it’s vegan but makes for a quick do it yourself instant kinda meal.

I made this quick burger and french fries meal with all store bought premade products. ( watch the sodium count as some can be high in premade meat substitutes ). I was short on time and in between fresh produce shops so I thought why not.

Here I used a grocery brand of premade veggie burger. Frozen fries and pickled spicy veggies.

I have to admit the sauce I made was from scratch but is super easy to make.

A quick way to still have vegan meals without making from scratch

Materials

  1. 2 patties store bought vegan patties

  2. 1/4 bag frozen french fries store bought

  3. 2 whole onion scallions chopped

  4. 1/2 cup hot pickled veggies from jar in store ( anti pasta)

Instructions


Pre heat oven to 350 Deg and place fries in the oven for 25-30 min.


In a non stick pan fry 2 burgers until finished


add sauce on finished burgers and place on bun


top with scallions and hot pickled veggies


remove fries from oven and top with scallions and hot pickled veggies

Notes

For the sauce I just whisked together 1/4 cup of tahini with 1/2 a lemon juiced, teaspoon of sea salt and a little water. aprox 1/4 cup .  Continue to stir until creamy.

Just a quick go to for a fast lunch or dinner without having to add a bunch of ingredients.
